    Rinse buffalo fish ribs under cold water and pat dry. Soak in buttermilk for at least 10 minutes.

    Mix cornmeal, flour, salt, pepper, garlic powder, and cayenne in a shallow dish.

    Remove ribs from buttermilk, letting excess drip off. Dredge thoroughly in the cornmeal mixture.

    Heat oil in a cast-iron skillet to 350°F. Fry ribs in batches, 5–6 minutes per side, until golden and crisp.

    Drain on a wire rack. Season immediately with a pinch of salt and serve hot with hot sauce and lemon wedges.
